Quick and Easy Chicken Cobb Salad

Ok, ya'll.


I'm super excited to share this quick and easy Chicken Cobb Salad recipe with you.  It's incredibly Keto-friendly and I put it together in about 5 minutes flat.  Perfect for an on-the-go dinner during the week when you're crazy busy!


My girls and I were walking through Target the other day, stocking up on all the things when I realized we were about 30 minutes from our normal dinner time and I had NO plans for what to eat.  Call it busy mom life, call it preggo brain, it is what it is.

 

So, we quick ran through the grocery store to stock-up on the ingredients for this super easy Cobb Salad and were in and out in less than 10 minutes!  Whoo, new record!  Got home, threw everything together and wah-lah!  Dinner was served!  Not far off from being on-time either, I might add.  ;-)

Super-Easy Chicken Cobb Salad


Here's what you will need:

Lettuce of your choice - I used a package of Italian, but you can really use whatever you'd like
1/2 package of grape tomatoes - sliced into quarters
1 avocado - sliced and diced
handful of feta cheese - or whatever type of cheese you prefer
3 hard boiled eggs - I usually make 7-10 eggs at the beginning of the week and use them for lunches, salads, etc., so this was on-hand for me and easy to grab
6-8 slices of bacon - I put mine in the microwave for about 4-5 minutes - place a napkin on a microwavable, bacon on top and another microwave on top of that
handful of diced chicken - we used Popcorn chicken from the grocery store deli - partially because I was too close to dinner time and partially because it just sounded so.darn.good, but you can really use any type of chicken here.  I love my crock-pot for this very reason!

 

And, that's it!  Mix it all in a bowl and it's ready to serve.

 

Seriously, it was so incredibly easy and my family devoured this entire bowl!  Keto-friendly, easy on the budget, AND my family loves it?!  Yes, please!!
